The three fields behave differently
Instagram gives you a username, a display name and a bio, and each one treats symbols differently. The username is the strictest: letters, numbers, full stops and underscores only. Nothing decorative survives there.
The display name is where most decoration goes. It accepts symbols and styled letters, and it is what appears in bold at the top of your profile. The bio is the most permissive of the three and also the one people actually read.

What to put where
Keep your username plain so people can type it, tag you and find you. Put the visual identity in the display name, where a couple of marks around your name reads as deliberate.
In the bio, use symbols as structure rather than decoration. A small mark at the start of each line turns a wall of text into a scannable list, which does more for the profile than ornament ever does.

Search is the thing decoration costs you
Instagram indexes your name and bio. A name written in cursive or Fraktur is a different set of characters from the plain version, so a search for your actual name will not match it.
If people find you by name, keep that name in ordinary letters and decorate around it. If your account is discovered another way, styled text costs you less.

Line breaks and the bio
Instagram strips consecutive blank lines in the bio on some clients. Writing the bio in a plain notes app and pasting it in usually preserves the layout better than typing directly into the app.
A symbol at the start of each line also gives the eye something to anchor on when the spacing collapses.

What tends to break
Very recent emoji show as blank boxes for anyone on an older phone. Long decorative frames wrap unpredictably because the bio column is narrow. Invisible characters used to fake blank lines are stripped by some clients and kept by others, so the layout differs per viewer.
Test the profile logged out and on a phone, not just in the editor.
